The vineyard has been shaped over the centuries by the Dukes of Burgundy, by monks and by winegrowers. A bottle of Burgundy is a piece of French heritage. I chose to claim Bourgogne Blanc on the labels and not Bourgogne Côte d'or or Bourgogne Chardonnay. My opinion is that these last two appellations impose unsustainable methods of conduct whereas the Burgundy Blanc appellation allows us to work in a more virtuous manner. With medium-large plantations and different grape varieties authorized for example.
