Here’s a Pinot Noir with a strong personality! It’s vinified in whole bunches, which lends the wine additional structure thanks to the tannic input of the grape stems (the woody part that keeps the grape bunches together); it also benefits from an 18-month cask aging, including 20% of new casks. A very versatile style of wine that will be great as much with grilled white meats as with delicate red meats.
