This 2025 release features a significant increase in age and a more complex finishing process. After ten years in ex-bourbon barrels, the spirit is finished for an additional six years in a diverse combination of sweet wine casks, including Sauternes, Monbazillac, Moscatel, and Tokaji. This multi-cask finishing is designed to create a "pastry shop in a bottle," offering an incredibly rich and decadent dessert-style profile.
On the nose, it offers a sumptuous bouquet of lemon tart, vanilla custard, and honeyed apricots, accented by notes of brioche and roasted almonds. The palate is velvety and lush, showcasing layers of poached pears, honeycomb, and white chocolate, balanced by a zesty citrus brightness and soft oak spice.
