
The Story
Grapes were individually harvested from our vineyard blocks in subregions throughout New Zealand and destemmed in the field before gently being pressed and undergoing cool fermentation with special yeasts to preserve the natural fruit character found in the grapes. “Spinning Cone” technology was used to remove the alcohol from the base wine. This is a process of low vacuum distillation that can target removal of alcohol without impacting the aroma of the wine.
