This Vieilles Vignes (Old Vines) cuvée is a concentrated expression of the Chablis terroir, sourced from vines primarily located in the commune of Courgis. Unlike their standard Chablis, which is vinified entirely in stainless steel, this wine undergoes aging in French oak barrels (averaging at least 5 years old) to develop greater aromatic depth. It presents an intense, bright yellow color with a bouquet of ripe stone fruits, citrus, and a delicate mineral touch with subtle saline notes. The palate is round and rich, balancing the natural freshness of the Kimmeridgian clay-limestone soil with a more full-bodied texture and spicy, slightly woody finish.
