The Story
This is not your bottom-shelf Trebbiano, but one that is very complex and impressive – a complete surprise. It is always a challenge for winemakers to take a local grape variety — one often grown for its productivity — and see what greatness they can tease out of at a higher level of quality. In this case, the formula is cold maceration, gentle pressing, not being tempted to use even aged oak, leaving it on the lees, then aging in bottle prior to release. Its aromas and flavors are reminiscent of both tropical and green fruitiness – much like a Sauvignon – with full-bodied structure, considerable complexity, and a long finish.
