To add a signature twist, Alan Bishop utilizes a portion of caramel malt in the mash bill and two distinct yeast strains—one for grain character and a "brandy yeast" for fruity esters. Bottled at 90 proof (45% ABV), it offers the silky, pillowy texture that wheated fans love, enhanced by the unique cocoa and toasted nut notes that define this Indiana distillery.
NOSE
Deep and rich with a spring-like floral profile. Aromas of toasted buckwheat pancakes, vanilla ice cream, and Werther’s caramel are met with a hint of cinnamon hearts and salted cashews.
PALATE
Creamy and dessert-like with a lush, oily mouthfeel. Sweet entries of vanilla cake frosting and honey-drizzled biscuits give way to complex notes of apricot, black tea, and a touch of milk chocolate.
FINISH
